The Vintage

Rain and mild temperatures early - Weeks-long heat spikes - Lean and delicate wines

Winemaking

Hand-picked early over 2 days. Press fractioned twice and fermented separately in 50% stainless steel tank and 50% neutral white oak barrels. Second fermentation spurred in bottle. Stayed 20 months on the lees. Disgorged May 2, 2025, and resealed after a minimal dosage of 2.00 g/L

Food Pairing

classic foods such as caviar or oysters, and cheeses like Brie, Camembert, and Gruyére.

The Vineyard

Today, it is called Boxing Rabbit Vineyard and has 30+ acres planted to eleven grape varieties. Current owners Preston and Kelly Alison are reviving these old vines to ensure they can express their maturity through wine.
