The post office keeps its own hours: 8 to 10 in the morning Monday through Friday, and 8 until noon on Saturday. It has its own door round the back, marked when it is open and locked when it is not — a separate, cordoned-off part of the building, not reachable through the tasting room.

Before You Come

Good to know

  1. Arrive five to ten minutes before your reservation so we can seat you properly.
  2. Reservations are for up to six guests. For a larger party, call us on 830.988.8800 and we will sort something out.
  3. Well-behaved children are welcome, and should stay seated with their party.
  4. Cancellations need 24 hours’ notice, by phone on 830.988.8800 or at info@rcsparkling.com.

Where exactly is Rebecca Caroline?
In the historic Hye Post Office at 10261 US-290, Hye, Texas 78635 — directly on Highway 290 between Johnson City and Fredericksburg. Parking is free and at the back of the building, and the tasting room entrance is at the back too.
How far is it from Fredericksburg?
About twenty minutes east on US-290. Johnson City is closer, roughly ten minutes to the west. Coming from Austin, we are on your way into Fredericksburg rather than a detour.
Is the post office still open?
Yes — it never closed. The Hye Post Office still operates inside the building as federal property, in its own cordoned-off section with its own door round the back, marked when it is open and locked when it is not. It keeps its own hours: 8 to 10 in the morning Monday through Friday, and 8 until noon on Saturday. It is not reachable through the tasting room. Read the building’s story.
Do I need a reservation?
No — walk-ins are welcome. We do encourage a reservation, particularly on Saturdays, when seats go early.
What is traditional-method sparkling wine?
Sparkling wine that takes its bubbles from a second fermentation inside the bottle it is sold in, then rests on the lees for months or years before it is disgorged. It is the method used in Champagne, it is slow, and it is still uncommon in Texas.
Are the wines made from Texas grapes?
All of them, entirely.

Yes. Rebecca Caroline is the traditional-method sparkling house of William Chris Vineyards, which is right across the street.
Can I bring my dog?
Leashed, well-behaved and vaccinated dogs are welcome in our outdoor areas. Service animals are welcome indoors.
