The short version

What: The traditional-method sparkling house of William Chris Vineyards.
Where: The historic Hye Post Office, 10261 US-290, Hye, Texas 78635.
The building: Post office established 1886; this building put up in 1904. Still a working USPS window.
Method: Second fermentation in the bottle, aged on the lees, riddled and disgorged by hand at Hye.
Fruit: Texas-grown, entirely. Named sites include Boxing Rabbit, Dell Valley, Letkeman Family, Darst Ranch and John Dale.
The name: For June Rebecca and Tess Caroline, Chris and Katharine Brundrett’s daughters.
Tasting room: Thursday–Saturday 11–6, Sunday 12–5.
