Tasting Notes

The fleshy, red-fruited nature of this wine shows best as it comes up gradually in temperature. Mineral and flinty lees aromas support the pure core, which is the brambly fruit of Pinot Meunier tamed into a deep, polished aroma with a silky frame of fine, yet purposeful bubbles. Dry.

The Vintage

Wet and healthy start to season - Moderate temperatures - Lengthy grape development time

Winemaking

Hand-picked early over 2 days. Pressed fractioned twice and fermented in stainless steel tank. Second fermentation spurred in bottle. Stayed for 18 months on the lees before riddling. Disgorged in February 2026 and resealed after a minimal dosage of 3.00 g/L.

Food Pairing

Savory dishes with richness. Smoked duck breat, mushroom risotto, and aged cheeses.

The Vineyard

Situated just below the Texas High Plains AVA southern border

Sonia and Pedro Letkeman have farmed just south of the High Plains border since 2015. Their 10 acres are on a rocky hillside of caliche and flaky limestone compared to the sandy plains above. Pedro, nicknamed 'Peato', is an innovative and meticulous farmer, actively promotes the Seminole and surrounding community's farming, and makes an amazing chili during harvest!

Vine maturity: 9 years

Soil: Sandy red clay and caliche

Elevation: 3,500 feet

Situated just below the Texas High Plains AVA southern border.
